Ingredients
  

Main Ingredients

  • 1.5 lbs chicken (boneless or bone-in)
  • 1/4 cup vinegar (apple cider, white, or balsamic)
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp fresh herbs like thyme or rosemary, optional

Instructions
 

  • In a bowl, whisk together vinegar, olive oil, garlic, salt, pepper, and herbs if using.
  • Place the chicken in a zip-top bag or bowl. Pour marinade over, seal or cover, and refrigerate for 30 minutes to 2 hours (not more than 4 hours).
  • Remove chicken from marinade and cook via grilling, baking, or pan-searing until golden and fully cooked.
  • Let the chicken rest a few minutes before slicing. Serve warm.

Notes

Don't over-marinate the chicken-2 to 4 hours is plenty. Try different vinegars for varied flavors. Leftovers are great in salads, tacos, or grain bowls.
