Ingredients
  

Rotel Dip Ingredients

  • 1 lb ground beef or ground sausage
  • 10 oz Rotel tomatoes with green chilies undrained
  • 16 oz Velveeta cheese cubed
  • 1 tbsp taco seasoning optional, for extra flavor
  • jalapeƱos or hot sauce optional, to taste
  • chopped cilantro or green onions optional, for garnish

Instructions
 

  • In a large skillet over medium heat, cook the ground beef until browned. Drain excess grease.
  • Stir in the Rotel tomatoes (with their juices) and taco seasoning, if using. Simmer for a few minutes.
  • Add the cubed Velveeta cheese. Stir until completely melted and smooth.
  • Optional: Stir in jalapeƱos or hot sauce for extra heat. Adjust seasoning to taste.
  • Transfer to a serving bowl or keep warm in a slow cooker. Garnish with chopped cilantro or green onions if desired. Serve warm with tortilla chips or your favorite dippers.

Notes

Keep the dip warm while serving to maintain that silky, gooey texture. If it thickens too much, stir in a splash of milk to loosen it up.
