  • 4 rockfish fillets about 5–6 oz each
  • 2 tbsp butter or olive oil melted
  • 1 lemon thinly sliced
  • fresh herbs like thyme or parsley
  • salt and pepper to taste

Mango Salsa Ingredients

  • 1 mango peeled and diced
  • 1/4 red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1 lime juiced
  • 8 tortillas corn or flour

Instructions
 

  • For the Baked Lemon Butter Rockfish: Preheat the oven to 400°F. Lightly grease a baking dish and place the rockfish fillets inside. Drizzle with melted butter or olive oil, sprinkle with salt, pepper, and fresh herbs, and layer lemon slices on top. Bake for 12–15 minutes until the fish flakes easily with a fork. Spoon sauce over fillets and serve.
  • For the Rockfish Tacos: Season rockfish fillets with salt and pepper. Sear in a hot skillet with a little oil for 3–4 minutes per side until golden and cooked through. Flake into chunks.
  • Make the Mango Salsa: In a bowl, combine diced mango, chopped red onion, cilantro, and lime juice. Mix gently.
  • Assemble Tacos: Warm tortillas, then pile with flaked rockfish and mango salsa. Serve with extra lime wedges.

Notes

For extra smoky tacos, char the tortillas over an open flame. If mango isn't available, swap with pineapple or peach for a sweet tropical twist!
